French Toast Recipe

This Banana Bread French Toast Recipe is a new spin on something ordinary. If you're bored of your oatmeal or whole grain bagel for breakfast and want to try something new, then look no further! Put those speckled bananas to work and make this low-fat Banana Bread.

If you're not ready to make french toast right away, just stick the loaf in the freezer so it can be used at another time for a quick meal option. It makes a great post-run breakfast or brunch during marathon training because of the great high-carb and protein combination. To add variety to the Recipe, consider adding 1/2 cup of chopped nuts into the batter for some added protein and healthy fats.


2 cups all-purpose flour
¾ cup sugar
2 tsp baking powder
½ tsp baking soda
pinch of salt
½ tsp cinnamon
1/8 tsp nutmeg
¼ cup canola oil
2/3 cup nonfat milk
1 egg lightly beaten
1 tsp vanilla
2 small ripe bananas, mashed

French Toast batter:

Make egg batter with 3 eggs, 1/2 cup nonfat milk and ½ tsp cinnamon.


  • Preheat oven to 350 degrees. Coat nonstick bread pan with cooking spray.

  • In a large bowl, stir flour, sugar, baking powder, baking soda, salt, cinnamon and nutmeg.

  • In a medium bowl, combine canola oil, milk, egg and vanilla. Add wet ingredients to dry ingredients, followed by mashed bananas.

  • Pour batter 2/3 full into loaf pan. Bake 55-65 minutes. Store in freezer. When ready to make French toast, slice 14 slices.

  • Mix egg batter in a medium bowl. Place bread slice in batter and coat both sides. Cook until lightly brown on stove. Repeat for remaining slices.
