Black Bean Salsa Recipe

This salsa recipe makes a quick and easy snack that is low in calories but still contains some good nutrition. Make it ahead of time to serve at your next party, or have some ready for a post-run snack!

In a medium bowl, mix together these ingredients:

1 red tomato, seeded and diced (1 can tomatoes can be substituted)
1 red bell pepper, seeded and diced
1 ½ cups (1can) black beans, rinsed and drained
1 jalapeno, seeded and minced
½ cup red onion, minced
½ cup cilantro, chopped
½ cup fresh lime juice
½ teaspoon sea salt, if desired

Serve with baked tortilla chips.

Nutrition (1/4 cup salsa):
23 calories, 1 gm protein, 4 gms carbohydrate, 1 gm fiber, 0 fat/saturated fat/cholesterol, 100 mg sodium.
