Choclate Bran Muffin Recipe

This chocolate bran muffin recipe is a great way to get your 25-35 grams of fiber each day! Not only are the muffins easy to prepare (only 3 ingredients + water!), but they can be made ahead of time, frozen, and taken out one by one when you need them. The chocolate-y taste makes a fun way to start your day at breakfast!

Ingredients:

3 cups All Bran cereal
2 ½ cups water
1 box brownie mix
1 ½ teaspoons baking powder

Instructions:
  • Preheat oven to 350 degrees F.

  • Pour cereal into bowl and cover with water. Let stand for 5 minutes.

  • Add brownie mix and baking powder.

  • Pour into twelve lined muffin cups (or tins coated with non-stick cooking spray).

  • Bake for 15-18 minutes, or until a toothpick inserted in the center comes out clean.


  • Nutrition (per one muffin, 1/12 of recipe):
    160 calories, 2.5 gms protein, 3 gms fat, 0 cholesterol, 30 gms carbohydrate, 4.5 gms fiber, 145 mg sodium.
