Cranberry-Walnut Muesli Recipe

This recipe is quick and nutritious: Just what you need for a morning when you feel rushed but still want to fuel your body with proper nutrition.

Ingredients:
¼ cup cranberry juice
1/3 cup oatmeal, dry
1/3 cup yogurt, vanilla
1/3 cup yogurt, strawberry
pinch of cinnamon
2T craisins
1T walnuts, shelled, chopped

Yield: 1 parfait

Instructions:
Mix cranberry juice, oatmeal, yogurt, and cinnamon in mixing bowl. Portion into a parfait cup. Top with craisins and walnuts.

Nutrition (per one parfait):
390 calories, 13 gms protein, 8.5 gms fat, 7 mg cholesterol, 66 gms carbohydrate, 4 gms fiber, 103 mg sodium

For a lower-calorie version, make these changes:

Ingredients:
1/3 cup, oatmeal, dry
1/3 cup light yogurt, vanilla
1/3 cup light yogurt, strawberry
pinch of cinnamon
1T craisins
1T walnuts, shelled, chopped

Yield: 1 parfait

Instructions:
Prepare as stated above in Regular recipe, omitting cranberry juice.

Nutrition (per one parfait):
250 calories, 12 gms protein, 7 gms fat, 3 mg cholesterol, 37 gms carbohydrate, 4 gms fiber, 95 mg sodium
