Mini Spinach Florentine Cup Recipe

This recipe makes a snack that is a great alternative to chips at your next party... You'll even be getting some veggies in from the spinach as you munch on them! The recipe does not contain any salt, and none needs to be added because of the saltiness of the lunch meat. These mini cups fit into perfectly into a diabetic lifestyle or if you're watching your carbs for whatever reason - just 1 gram per cup!

Ingredients:
1 package, 8 oz., frozen chopped spinach, thawed, well drained
½ cup Part-Skim Mozzarella, shredded
1/3 cup Reduced Fat Cream Cheese
1 Tablespoon Parmesan Cheese, grated
1 Tablespoon onion, finely chopped
¼ teaspoon garlic powder
24 slices Oven Roasted Turkey Breast, thinly sliced

Instructions:
Preheat oven to 350 degrees F. Mix all ingredients except turkey until well blended.
Flatten turkey slices; place 1 slice in each of 24 mini muffin pan cups. Fill each with 1 ½ teaspoon of the spinach mixture.Bake 15 minutes, or until heated through. Serve warm.

Nutrition (per 1 of 24 appetizers):
25 calories, 3 gm protein, 1.5 gm fat, 5 mg cholesterol, 1 gm carbohydrate, 0 fiber, 140 mg sodium.
