Lemon Dill Tuna Salad Recipe

This Tuna Salad Recipe makes a quick and easy meal that can be eaten on top of fresh greens or made into a wrap. Double the recipe and do something different with the leftovers!

Ingredients:
2 ½ tsp lemon juice
2 ½ tsp olive oil
2 tsp celery, diced, fresh
1 ½ tsp onions, diced, fresh, raw
½ tsp dill weed, dried
¼ tsp parsley, flaked
salt and pepper to taste
4 oz tuna
1 leaf, lettuce, green leaf
3 tomato wedges
1 lemon wedge, fresh cut

Yield: 1 serving

Instructions:
In a large mixing bowl, whisk lemon juice while slowly pouring in olive oil. Whisk celery, onion, parsley, dill weed, salt and pepper to emulsion. Gently fold in chunk tuna, mixing well. Serve on lettuce leaf with tomato and lemon wedges.

248 calories, 27 gms protein, 15.5gms fat, 30mg cholesterol, 5gms carb, 1.4gms fiber, 167mg sodium
